2023 Varieties
We are continually on the hunt for new varieties. Some we choose for their HUGE cloves, some for their storage ability. This season we are trying three new porcelain varieties with high allicin content.
Hardneck Garlic
Marbled Purple Stripe Varieties
Bogatyr-
5-6 large cloves per head, can store for up to ten months. Intensely hot when raw, roasts really well, and pairs well with rich ingredients. Native to Moscow, Russia, it was released worldwide in 1989 with the collapse of the Soviet Union.
Khabar-
marbled purple stripe, 4-8 large cloves, store for 6 months. When eaten raw it has some initial heat then mellows out. A robust, classic garlic flavor when cooked makes it a favorite among chefs.
Choparsky-
marbled purple stripe, 4-7 cloves, from Khabarofsk, Siberia. Mild and smooth when cooked, raw and the heat will grab you! A new favorite.
Porcelain Varieties
Romanian Red-
porcelain variety, very large cloves, 2-4 per head. Deliciously pungent add’s long lasting heat to any dish, nutty aftertaste. Pairs well with Asian and Mexican dishes. Discontinued July 2023.
Music-
porcelain, Italian variety. Rich, robust flavor. Large easy to peel cloves, 4-6 per head. Long storage.
Georgian Fire-
porcelain, from republic of Georgia. Powerful, full flavor, fiery, great for fresh salsa!
Georgian Crystal-
porcelain, 4-6 cloves. Classic roasting garlic with smooth, buttery flavor and texture. Extra oily garlic, making it a healthy choice high in allicin content. Discontinued July 2023.
German White-
porcelain variety, large cloves, 4-6 per head, stores great, up to 10 months. One of the best in taste without the heat. Discontinued July 2023.
Rocambole Varieties
Spanish Roja-
rare rocambole variety, 6-9 cloves per head, easy to peel, stores up to 6 months. Raw it is spicy, as are most garlics, when cooked has a flavor that is sweet rich and complex.
Korean Red-
rocambole variety, 8-9 cloves per head, easy to peel, stores up to 6 months. Lasting flavor, hot and spicy. Preferred for Kimchi.
Purple Stripe Varieties
Chesnok Red-
purple stripe, from the republic of Georgia, 8-20 skinny cloves, long storage 6-7 months. Sweet when roasted, wonderful for baking
Marjean-
Unique purple stripe was bred in Mohawk Valley, NY. Extremely hardy, consistently large bulbs with 8-12 cloves. Great all around garlic with easy to split cloves. Strong even flavor is distinct, but not overpowering. Drought tolerant.
Softneck Garlic
California White- artichoke soft neck, 10-20 cloves per head. Excellent storage quality up to 12 months. Mild, full bodied garlic flavor, large plump cloves. Discontinued December 2022.
French Heirloom- artichoke soft neck, rare heirloom variety large heads with up to 20 cloves. This one only gets better when cooked. Discontinued December 2022.
Kettle River Giant- artichoke, heirloom variety originally from Kettle Falls, WA. Medium flavor, long storage, 8-20 cloves per Giant head! Discontinued December 2022.
